Lorna’s Banoffi Pie

The Story:
What a lovely idea this is! I have attached the very simple recipe for banoffi pie. Some may consider it dangerous since it requires boiling a tin of condensed milk for at least 3 hours. My story for this recipe relates to exactly that. It's such a popular dish that my youngest requested it for his end of season soccer party. We were in our very first home in the States...a rental in Larchmont. I put the tin in the boiling water and then promptly forgot about it. Two hours later, I returned to the house, the water had boiled dry, and the can exploded across the kitchen, just missing some family heirloom crystal glasses and cementing hard toffee onto the kitchen cabinets and ceiling. Cleanup took several hours. To my husband’s credit, the only comment he made was "couldn't you have bought something?"

Banoffi pie remains a family favourite. 

Who am I?
I tend to do the easy flow yoga and have found it so beneficial over the years for not just flexibility, but for balance and mental relaxation. I started to practice at the Shore Acres clubhouse and loved the ease and camaraderie of the group. The practice really does feed the soul. I love the fact that all these years later, we are still doing yoga together, in different time zones and from various States and countries. 

I live near Stratford on Avon, an area called the 'Notswolds', just a couple of miles North of the Cotswolds in England. It's a beautiful part of the world. Born in London, I consider myself to be a true Londoner, and, whilst I loved my 24 years living in the States, I feel very much at home back in England. I am an identical twin and enjoy spending more time with my twin Sister, Maddy. I also discovered recently that I have 12% Jewish ancestry from a Great Great Great Grandfather from Eastern Europe. I have spent some time learning about my family tree, and found it to be a fascinating and quite moving experience.

Boil condensed milk in can in plenty of boiling water. Keep boiling water topped up! Do this for about 3 hours. Ideally put cooled can in fridge overnight. Make biscuit base with crushed Graham crackers and melted butter pressed down into dish. Chill. Spread caramel from condensed milk can over base and slice a large banana over this Top with whipped heavy cream. Grate chocolate on top.
