Martha’s Spinach and Cheese Quiche

The Story:
What you see in the photo is the remains of a spinach and cheese quiche. The recipe makes plenty and is a staple for me. I love it as it’s got lots of protein and a green veggie.

Who am I?
The photo of me was taken recently at the Arnold Arboretum, a favorite place for walking. When not leading yoga at the Church across the street or practicing yoga online with all of you, I can often be found outdoors enjoying nature or volunteering in a reading program where I go into a school and read with a child.

Spinach and Cheese Quiche
Ingredients:

  • 8 oz shredded cheese

  • 6 oz cottage cheese

  • 3 eggs

  • 2 cups chopped spinach

  • 1/2 cup chopped onion

  • 1 garlic clove

Directions: Mix together the first four ingredients (shredded and cottage cheeses, eggs and spinach). Saute the onion and garlic, then add to the mixture. Pour into a casserole dish and bake at 350° for 35 minutes.
