This Lemon Squares recipe was added to my collection from a trip to Chadds Ford, PA.

Who am I?
Originally from Washington state I married a Larchmont young man and have spent the rest of my life in Mamaroneck and Larchmont, NY.

Lemon Squares
Yield: Makes about 20 bars

Ingredients:

  • 1 cup butter, softened

  • 1/2 cup powdered sugar

  • 2 1/3 cups all-purpose flour

  • 4 eggs

  • 2 cups granulated sugar

  • 1 tsp grated lemon peel

  • 1 Tablespoon lemon juice

  • 1 tsp. baking powder

  • Powdered sugar

Directions: In large bowl of an electric mixer, beat butter and the 1/2 cup powdered sugar until creamy; beat in 2 cups of the flour, blending throughly. Spread mixture evenly over bottom of a well-greased 9x13 inch baking pan. Bake in a 350° oven 20 minutes.

Meanwhile, in small bowl of mixer, beat eggs until light. Gradually add granulated sugar, beating until mixture is thick and lemon-colored. Add lemon peel, lemon juice, remaining 1/3 cup flour, and baking powder; beat until smooth and well combined.

Pour lemon mixture over baked crust and return to oven; bake for 15 to 20 minutes or until topping is pale golden. Place on a rack to cool; while still warm, sift powdered sugar lightly over top. To serve, cut into bars about 2 1/2 by 2 1/2 inches. Store airtight.
