Pat’s Kale Salad from the Californian

The Story:
The ‘Californian’ in the recipe name celebrates that Pat was a Californian long before she became an East coaster with a move to Boston and then, much later, to her current home in Delaware. :-)
Who am I?
Ballet as a kid, modern dance in college. Disco before marriage to a stuffy New Englander. A nurse practitioner steeped in alternative and healthy ways. Backpacker on the west coast. Yoga with dear Martha as the teacher (6:30am at our church!)
Kale Salad
Fresh kale, chop small. Massage with drizzled olive oil.
Top with parmesan cheese, sliced almonds, dried cranberries.
Add shredded carrots for sweetness.
Salad dressing:
olive oil
Fresh lemon juice
Dijon mustard
Honey or pure maple syrup
Season with salt/pepper to taste
