Robert’s Blueberry Maple Surprise

I am a college English Professor at the University of Hartford. I have written extensively on Jane Austen novels. I grew up in Shore Acres near Laurie. I enjoy practicing gentle flow yoga with our yoga community. I have been part of the group since its inception; in so many ways, yoga has enhanced my life.

Blueberry Maple Surprise
Serves one person

Ingredients:

  • Frozen organic blueberries

  • Vermont maple syrup

  • Almond milk (please no substitutes)

Directions: Grab a nice sized bowl or large coffee mug. Fill the mug or bowl 3/4 of the way with the frozen blueberries. Pour a healthy drizzle of the maple syrup over the top.

Add almond milk to cover and let sit for 5 minutes.

With a large fork, mash the blueberries into the almond milk until chunky, then add a little more almond milk. Stir once or twice more with the fork.

And enjoy with a spoon!
